Pop!

Sweet Recipe Saturday

These past couple of days have been full of reminiscing and reunioning. One of my roommates from the Disney College Program got married yesterday, and another roommate also came in for the festivities. It has been great catching up on each others' lives, talking about our 5 months we spent together at Disney and all of the fun things we got to experience, and making new memories as we witnessed a beautiful day full of love and celebrations yesterday. My mind instantly went to some of the sweet creations we made in our apartment when thinking of a delicious recipe to share today. This delightful dessert is very easy to do but involves a bit of getting your hands covered in cake and frosting (oh no, what ever will we do?!). To Lindsay and Jessica, here's to the good old days!


Cake Pops


Ingredients

-1 box Funfetti cake mix
-ingredients for boxed cake recipe
-1 tub of vanilla Funfetti frosting
-24oz vanilla candy coating.
-8oz semi-sweet chocolate
-small wooden sticks (optional)

Directions

1. Bake cake according to package's directions.
2. Allow to cool for 15min.
3. In a large mixing bowl, crumble the cake with your hands into tiny pieces.
4. Remove the lid and seal from the tub of frosting and microwave for 20sec.
5. Stir the frosting into the crumbled cake until fully incorporated. Don't be afraid to use your hands, especially since clean up involves licking cake and frosting off of your hands (best cleanup ever!).
6. Form into small balls and arrange on a baking sheet.
7. Melt candy coating in a double boiler until smooth. Then remove from heat.
8. Using a fork, take each ball of cake and dip into candy coating (act quickly so the candy coating doesn't harden). Arrange back on baking sheet.
9. Melt semi-sweet chocolate in a double boiler until smooth, then remove from heat. Allow to cool enough that it does not burn your skin if you put it in a plastic baggy, but do not let it get to hard.
10. Cut a small hole in the plastic baggy and squeeze the chocolate into a drizzle over the cake pops.
11. Place a stick into the middle of each cake pop (optional).

These bite sized pops of yumminess will leave you wanting more and more, and that's totally ok because they are so small! Now, what Disney movie are we going to enjoy these to? Ahhh, sweet memories...


*Substitute any combination of cake and frosting! Other favorites of mine are carrot cake and cream cheese frosting, devil's food cake and cream cheese frosting, yellow cake and chocolate frosting, and lemon cake and strawberry frosting.
