People tend to drift toward white meat when trying to switch toward a healthier lifestyle. Fear not, red meat lovers, for you too can still enjoy your beef in a healthy way! My cousin from Ireland, Kevin, has been visiting with us for the past week. We've had such a great time showing him around and spending time with him! The only difficult part about his visit is his picky palate. He basically only eats red meat. This was perfectly fine with Seth because we do not usually have much red meat, even though it is also Seth's preferred type of meat. I decided to make a very basic beef dish in order to accommodate Kevin's taste buds and also to keep this beef dish on the healthier side. I was a bit nervous as to how it would taste given the very few ingredients, but it got rave reviews. This will definitely become a healthy beef staple meal in our family given the delicious taste and incredible ease!
Basic Beef Brisket
Ingredients
-2 russet potatoes
-3 large carrot sticks
-3 large celery stalks
-2.5lb beef brisket
-2tsp salt
-2tsp pepper
-1.5 cups water
Directions
1. Wash vegetables using a scrub brush and warm water. Chop them into small bite-sized pieces. Place at bottom of crock pot.
2. Sprinkle salt and pepper over top of brisket.Place on top of veggies in crock pot.
3. Pour water around brisket.
4. Cook on low for around 10hrs or high for around 5hrs.
*Be careful with crock pot recipes that include fatty sauces, especially the canned ones, in the ingredients list!
