Before my husband was the love of my life, he was trying to swoon me over by going straight to my heart... AKA my sweet tooth! He made so many of these bite sized desserts that he had to transport them to my apartment in shoe boxes since he ran out of Tupperware (thankfully he lined the shoe boxes with parchment paper first!). These treats are full of 2 of my favorite flavors- peanut butter and chocolate- and make having just 1 or 2 impossible. Luckily I had roommates eager to get in on the deliciousness as well, otherwise I would have eaten them all in 1 sitting. I should have known then that Seth was a keeper ;)
Chocolate Chip Peanut Butter Cookie Cups
Ingredients
Your favorite prepared chocolate chip cookie dough (18oz package)
24 chocolate peanut butter cup candies (Reese's is our preferred brand)
Directions
1. Preheat oven to 350.
2. Lightly flour your hands and press about 1 tbsp of cookie dough onto the bottom and up the sides of each ungreased mini muffin slot.
3. Bake for 8-10min. or until lightly browned. Meanwhile, unwrap chocolate peanut butter cup candies.
4. Immediately after removing from the oven, gently press 1 candy into the middle of each mini cookie so that the top of the candy is still visible.
5. Cool until at room temperature.
Variations
Experiment with other kinds of cookie dough, but be mindful of the change in baking time!
Use other bite-sized candies to fill the middle!
I love making these using the Tollhouse Cookie Dough that comes in the tubs. I use a melon ball scoop to help measure the dough.
