Chicken is definitely my favorite meat, and I am thankful that (for once) something that is my favorite is actually very healthy! There is so much you can do with chicken, and I love experimenting with spices. My grandma used to make and my mom still makes a traditional Hungarian dish called Chicken Paprikash which, as you probably could have guessed, uses paprika as the main spice. I did not have all of the ingredients for this delicious dish from my childhood, so I decided to make a healthier version of this old-time favorite. I cut out the cream and butter and instead used water and Smart Balance. The end result was amazing and so flavorful! The simplicity of this recipe is definitely something that will make this a staple in our household as well. You will definitely enjoy this fall-apart chicken dish.

Chicken Paprika
Ingredients
-1 tbsp Smart Balance
-3 boneless and skinless chicken breasts
-6 carrots
-3 russet potatoes
-1 tbsp paprika
-1/2 tbsp garlic powder
-1 tsp salt
-1 tsp pepper
-1/4 cup water
Directions
1. Melt Smart Balance in a large saute pan over medium heat. Add chicken and brown for about 5 min on each side.
2. Meanwhile, peel carrots and wash potatoes. Cut both into large bite-sized chunks. Add to saute pan.
3. Sprinkle spices evenly over everything in the saute pan. Add water around the perimeter of the contents in the saute pan.
4. Turn heat to medium-low, cover with lid, and allow to cook for another 20 minutes. Stir occasionally keeping the chicken at the bottom of the contents.
