After going on a European honeymoon for 2 weeks, starting a new job, and adding a puppy to our little family, I am excited to be back! Just because I have been an inactive blogger for a little bit does not mean I have been an inactive sweets pursuer. Let's start this up again in a healthy way, though, shall we?
Being half Lebanese, I have grown up with an array of delicious Mediterranean food. One of my favorites is hummus. I love the texture, the endless options for flavored varieties, and the vast amount of food that compliments it. I loved it before I found out how packed with protein it was, so to find out that one of my favorite snacks was also healthy was a huge win! I decided to try making my own hummus since I loved it so much. After experimenting with different amounts of each ingredient to try and find my favorite consistency, I discovered that I really do not have a favorite! Sometimes I want my hummus to be chunky, but others I want it to be more smooth. The fact that this simple recipe has very few ingredients makes it very easy to alter to your liking, and it makes for a very handy item to bring to a pot-luck.
Handy Hummus
Ingredients
-1 16oz can chickpeas, drained
-1/4 cup lemon juice
-2 cloves garlic
-1 tbsp extra virgin olive oil
-1/3 cup tahini
-1 tsp salt
Directions
1. Mash chickpeas using a fork enough to rid them of their circular shape.
2. In a food processor, combine the chickpeas and lemon juice.
3. Repeat Step 2, waiting a few seconds before adding the next ingredient.
*CREAMY OR CHUNKY?
-For a creamier consistency, place chickpeas in a saucer and bring to a boil for 3 minutes. Be careful when mashing them because they will be very hot!
-For a chunkier consistency, add more chickpeas and use less lemon juice. Tahini is, most definitely, a necessary ingredient, so always use the recommended amount of it to get an authentic taste.
Recommended Uses
-Keep it chunky and use as a spread for sandwiches!
-Keep it extra creamy and use as a pasta sauce!
-Add 3 tbsp of either chopped black olives, cucumber, sun-dried tomatoes, green pepper, or your other favorite vegetable flavoring into the food processor for a deliciously personalized dip!
-Dip carrots, celery, crackers, pretzels, chicken tenders, or your other favorite snack food in it!

Slowly combine ingredients one at a time in food processor |
Continue adding ingredients until your desired consistency is reached |
