Chocolate... Here Today, Gone Today!

Sweet Recipe Saturday 

It is only appropriate that I kick off this Saturday tradition with a recipe that includes my most favorite ingredient of all time: CHOCOLATE. I don't know what it is about its decadent taste, but it is something that cannot be compared to. Below is a recipe I made for my Mom, the woman who I blame my chocolate obsession on, as her birthday dessert a few years ago. I got the recipe from Ghirardelli, one of our favorite chocolate brands. This incredibly rich chocolate taste was enjoyed by everyone in my family, and we were able to all go back for seconds since we doubled the recipe!


Individual Molten Chocolate Cake


Ingredients

(Filling)
-2/3 cup Ghirardelli semi-sweet chocolate chips
-1/3 cup whipping cream

(Cake)

-1/3 cup water
-1/3 cup vegetable oil
-1 egg
-1 package of Ghirardelli Double Chocolate Brownie Mix

Directions

1. Preheat oven to 325.
2. Prepare eight 6oz ramekins (or any oven-safe custard cups) by lightly spraying them with non-stick cooking spray.
3. Make filling by placing chocolate chips in a bowl. Heat whipping cream until it reaches a low boil, and then pour over the chocolate chips. Stir until the chocolate chips have melted and the mixture is smooth. Refrigerate until it is firm.
4. Make cake by blending the water, oil, and egg in a medium bowl. Add the brownie mix and stir until moistened.
5. Divide half of the batter evenly into the prepared ramekins (about 1/4 cup of batter per ramekin).
6. Spoon a heaping tablespoon of the firm filling gently over the batter in each ramekin.
7. Spoon remaining batter over the filling.
8. Bake 30-35min. and serve immediately.

Recommended pairings

-Dust with powdered sugar!
-Put a dollop of whipped cream on top!
-Scoop vanilla ice cream (or chocolate for the die-hard chocolate fans like me) on top!
