It's Ok to Split on Valentine's Day

Happy Valentine's Day! I hope everyone had a great time celebrating with their loved ones and that, most importantly, you ate LOTS of chocolate. I know I did! Valentine's Day will always be special to me because the love of my life asked me to be his Valentine for the first time 4 years ago to the date, but also because it was my lovely late Grandmother's birthday. To honor her, this edition of Social Sunday recipes is dedicated to her, and I will share with you one of my favorite desserts of hers.


Grandma's Banana Split Cake


Ingredients

-3 cups finely crushed graham crackers
-2/3 cup sugar
-12 tbsp butter, melted
-1 tsp cinnamon 
-1 stick margarine
-1 stick butter
-1 tsp vanilla
-2 eggs
-2 cups powdered sugar
-2 whole bananas, sliced
-1 can of crushed pineapples, strained
-8 oz whipped topping, thawed
-10 strawberries, quartered

Directions

1. Prepare graham cracker crust by mixing the first 4 ingredients and pressing into the bottom of a 9"x13".
2. Mix next 5 ingredients using a hand beater and spread over graham cracker crust.
3. Poke banana slices into the filling evenly over the filling and spread pineapples over the bananas to cover them.
4. Spread the whipped topping over the layer of pineapples and top by evenly placing strawberries on top.
5. Chill in refrigerator for at least 30min prior to serving. Enjoy!

What a great spin on one of the most classic desserts out there- the banana split! With the amount of fruit in this yummy recipe, this meal should be classified under healthy snacks, right? ;) Thanks for the recipe G-ma. I love and miss you every day!
