Lucky Number 4

Healthy Hump Day Recipe

4 ingredients, 4 minutes to prep, 4 hours to cook, and 4 (or more) tasty dinners. I've been making the easiest, most delicious, healthy recipe lately. It is a Mexican inspired chicken dish loaded with protein and veggies. The best part about it is that I make it in the crock pot, so I leave the house with an uncooked meal and come home to a house smelling like something yummy has been cooking all day, and it has! Don't adjust your computer screens at all, the recipe really is as easy as it looks. This dinner is just what your family needs in the middle of the week to help get through the next half!

Fiesta Chicken

Ingredients

-4 skinless boneless chicken breasts, thawed
-1 15oz jar of salsa
-1 15oz can black beans
-1 15oz can corn

Directions

1. Place chicken breasts in the crock pot.
2. Pour entire jar of salsa over chicken.
3. Pour entire can of black beans over salsa.
4. Pour entire can of corn over black beans.
5. Set crock pot on low for 8hrs or high for 4hrs.

*Serve over a bed of brown rice and enjoy with a side salad of spinach, shredded carrots, and tomatoes for one of my favorite meals!

  1. This recipe sounds absolutely delicious! I can't wait to try it, my family has some really picky eaters and chicken is something we can all agree on. I'm always looking for new ways to spice things up. Thanks Girl Vs Sweets!
