Sweet Recipe Saturday
When Seth and I went on our honeymoon to Ireland last year, I wanted to be fully immersed in the Irish culture the entire time. Staying at the house my Irish grandmother grew up in with loads of my family, eating soda bread and drinking tea, and making nightly visits to the local pub (1 of 2 on the island) made it pretty authentic. While at the pubs, my mom, Aunt, and I drank Bailey's nearly the every time. Not only is it known to be an Irish drink, but it is so creamy and tasty which made it perfect! In honor of St. Patrick's Day being only 2 days away, I would like to share my Bailey's Mousse recipe in celebration. If someone tries to pinch you for not eating a green dessert, you tell them that Bailey's trumps green!
Shamrock Mousse
Ingredients
-8 oz chopped dark chocolate
-6 eggs, separated
-4 tbsp Bailey's Irish Cream
-3 cups whipped cream, divided
-shavings of dark chocolate
Directions
1. In a double boiler, melt dark chocolate by stirring constantly. Remove from heat and set aside to cool.
2. In a medium bowl, beat egg yolks and pour in the dark chocolate and Bailey's. Stir until very well incorporated.
3. Mix in half of the whipped cream by gently folding it into the chocolate combination.
4. In a small bowl, beat egg whites until stiff peaks are able to form. Incorporate the egg whites to the chocolate combination by, again, gently folding it in.
5. Garnish mousse with the remaining whipped cream and chocolate shavings.
*The Bailey's gives this rich chocolate mousse recipe a rich and distinct taste, but it is not overpowering!
*Lessen the amount of Bailey's if serving to little ones!
