Social Sunday
I was scrolling through my big binder of recipes and found some hidden gems that I haven't made in quite some time, some of which being from some very dear friends and family of mine. As we have been finishing up the remainig Blueberry Crumble dessert from last week's Sweet Recipe Saturday, I have chocolate on the brain. I have been continuing to stay strong and not eat chocolate so far during Lent, and I hope to finish out strong as well! I can still think about chocolate though, right? The perfect recipe for this week's edition of Social Sunday, then, is a chocolate cake from my Aunt Diane. When she joined the family by marrying my Uncle Rick, she made the innocent mistake of bringing some sort of fruit tart to a family gathering instead of chocolate. After tasting this recipe and now making it, I can see that she learned that we love our chocolate!
Ingredients
-1 box moist chocolate cake mix
-1 cup milk
-5 tsp flour
-1 stick of butter at room temperature
-1 cup sugar
-1/2 cup shortening
-1 stick of melted butter
-1 egg
-1 tsp vanilla
-2 1/2 tbsp hot water
-1 1/2 cups powdered sugar
-3 envelopes pre-melted unsweetened chocolate flavoring
Directions
1. Prepare chocolate cake mix according to box directions for a double layer cake.
2. In a saucepan, mix milk and flour on low heath until thickened, then remove from heat and store in refrigerator.
3. Beat butter, sugar, and shortening in a large bowl. Add thickened mixture from Step 2 and mix until fluffy.
4. Spread mixture evenly on one of the cake layers and place the plain cake layer on top.
5. In another large bowl, combine butter, egg, vanilla, hot water, powdered sugar, and chocolate envelopes until well mixed, and then pour onto top of cake.
6. Refrigerate well before serving.
I cannot wait to make this again once Lent is over! Thanks Aunt Di :)
And don't we love telling that story over and over again, Jackie? Diane will never live it down, though she has made up for the 'fruit' mistake she made so many years ago.........she's been a good sport, but it still makes me laugh! Aunt Debbie xxoo
