Not-cho Typical Nacho

Healthy Hump Day Recipe

A quick, easy, tasty, and healthy meal can be hard to come by. There are some nights, however, where we don't have much time to cook or haven't planned on making something specific. When hunger strikes, though, we want food! By keeping some ingredients stocked at all times, nights like these are easily taken care of. Nachos and cheese seem to be a go-to meal for Seth and I when we are in a bind. What's that you say? Nachos and cheese are the furthest thing from healthy? Well, they certainly can be, but not when you make some replacements to the traditional queso-loaded corn chips. Besides, having 2 ingredients, nachos and cheese, is so boring. Follow this recipe to try our deliciously nutritious alternative!


Dressed Up Loaded Corn Chips 


Ingredients

-corn chips
-1/2 lb ground turkey breast
-1/2 cup chopped onion
-1 cup fresh chopped spinach
-1/2 cup chopped tomatoes
-1/2 cup chopped bell peppers 
-1/2 cup low-fat shredded Mexican style cheese

Directions

1. Look at the serving size of corn chips and double that per person. Lay out that number of chips on a plate.
2. Combine meat and chopped onion in a large pan and saute until meat has browned.
3. While the meat is cooking, display the rest of the ingredients in small individual bowls to create a nacho bar.
4. Evenly distribute meat on top of the chips.
5. Choose whatever healthy items from your nacho bar that you would like.

You will feel like you are at a ball game or movie with this fun and delicious meal!


*I always load up on veggies because they don't have as strong of a taste as the meat and cheese!
