Stir-fry is a family favorite in our house even though we have never had the same stir-fry twice (yet). I absolutely love the diversity this dish involves from the meat you use to the vegetables you add in, but the real star of the show is the sauce. The spices, the base, and the random add-ins can really make or break your stir-fry meal. The decisions you make in regards to the sauce's ingredients can also make or break the nutrition factor of your stir-fry meal. By knowing the right combination of ingredients that pair well together, making a delicious stir-fry is as easy as tossing your ingredients into a wok.
This recipe uses one of my favorite ingredients, peanut butter! It gives the chicken a subtle nutty taste that compliments the the other ingredients used that you would find in a normal stir-fry recipe. Talk about a protein packed meal! Stick to the recipe for the sauce and chicken, but feel free to toss in your favorite vegetables to make this dish a family favorite for you too!
Chicken Thai Peanut
Ingredients
-2 lbs boneless, skinless chicken breast cutlets
-1 red bell pepper
-1 orange bell pepper
-1 large vidalia onion
-8 oz portabello mushrooms
-16 oz green beans
-1/2 cup rice vinegar
-1/2 cup soy sauce
-3 tbsp peanut butter
-2 tbsp water
-3 tsp minced garlic
Directions
1. Cut chicken into bite-sized chunks and place in a medium bowl. Chop veggies into bite-sized chunks and place in a medium bowl
2. Combine all ingredients after veggies in a small microwavable-safe bowl and heat for 60 seconds. Whisk ingredients until full incorporated.
3. Pour 2/3 sauce mixture over the chicken and massage the sauce into the chicken with your hands. Allow to marinate for at least 2 hours or overnight.
4. Pour the remaining sauce mixture over the veggies and stir to fully coat. Allow to marinate for 30 minutes.
5. Over medium heat, cook chicken for 10 minutes while stirring every couple of minutes.
6. Add in veggies and continue to cook for 10 minutes while stirring every couple of minutes.
*Careful not to over marinate the vegetables so as not to end up with wilted add-ins!
*Serve over brown rice!
*Serve fajita style!
*Double the recipe and have leftovers!
The ingredients |
Combine all ingredients for sauce, microwave, and stir |
Massage 2/3 sauce into chicken and refrigerate at least 2 hrs |
Stir remaining sauce into veggies and refrigerate no more than 30 min |
Cook chicken in wok 10 min and add veggies in for another 10 min |
Serve over brown rice |
