Ice Cream Chemistry

Maniac Monday: Challenge- Girl Vs. Liquid Nitrogen

We celebrated a friend's birthday last week, and I noticed an ice cream shop on the other side of the parking lot and asked if anyone else was interested in getting some ice cream with me. I didn't realize that we were about to get much more than delicious ice cream, though. We walked into Abracadabra (currently undergoing a name change, so stay tuned for that) and first noticed huge nitrogen tanks and no ice cream. A bit confused, we continued making our way to the counter to find who we later learned was the owner mixing ingredients in a stainless steel bowl, blasting it with this crazy force of gas, and continuing to mix. The result? An incredibly delicious looking bowl of ice cream! How... What... Huh?! We were all in awe at what we just saw and had so many questions. It was finally our turn, and we had the owner's full attention and patience. This wasn't your average ice cream parlor, it was a unique experience in which each ice cream creation is made from scratch right before your eyes. I wanted chocolate ice cream with banana, nutella, and brownie. First, she poured some cream into a stainless steel bowl followed by chocolate syrup and mixed them together. Next she sliced a banana, diced a brownie, and squirted some nutella over the chocolate cream. Then we followed her over to the nitrogen tank where she held the bowl under for about 10 seconds. We returned to the counter, and she started mixing the contents of the bowl, but it just looked like dry ice was in there as fog was pouring out all over the counter. After about 30 seconds, the fog was gone and a beautiful chocolate ice cream with banana, nutella, and brownie creation was ready to be eaten. After an experience like that, I didn't really care what the ice cream was going to taste like because I was still in awe at how cool of a concept this way of making ice cream was, but then I had to dive in for a taste. The consensus? Absolutely amazing. The consistency was so creamy, the ice cream so flavorful, and the add-ins so complimentary of each other. I ordered a large and ate every last bite, still amazed by the whole experience. This is definitely something to try out!
