My mom's birthday and Mother's Day always fall around the same time every year, and this year was no different. However, that weekend also had another huge event going on: the graduation from Nursing School of one of our best family friends and someone I consider my sister. We were so proud of her! The graduation itself was on one day, and her party was the next. Lots of yummy foods and, of course, desserts were served, and a great time was had by all. The only problem about the weekend was that I did not make my mom her special birthday/Mother's Day dessert, a job that I gave myself of doing for all of my family members on their special day. Thankfully, I had an opportunity to redeem myself when they came up to visit for the weekend! Being the Oreo connoisseur that I know she is, I was determined to incorporate those into her delicious birthday concoction. We make this delicious whipped cream and Oreo dessert that we absolutely love, but I wanted to kick it up a notch since it was for an extra special occasion. This chocolaty, Oreo-y, creamy dessert was just what I needed to make up for the fact that it was almost one month late...
5-Layer Oreo Pie
Ingredients
-45 double-stuffed Oreo cookies (family pack), divided
-1 stick unsalted butter
-8 oz softened cream cheese
-1/2 cup sugar
-3 1/2 cups milk, divided
-16 oz whipped topping, divided
-2 packages cook-and-serve chocolate pudding
Directions
1. Place 40 Oreos in the bottom of a 9"x13" baking dish. Using the bottom of a wooden spoon, crush Oreos.
2. Melt butter in microwave and pour over Oreos. Mix well. Refrigerate for 15 minutes.
3. Cream together cream cheese, sugar, 4 tbsp milk, and 8 oz whipped topping using a handheld electric mixer. Spread over Oreo layer.
4. Bring remaining milk and pudding mix to a boil by heating in a medium saucepan over medium heat. Stir constantly. Refrigerate for 15 min. Spread over cream cheese layer.
5. Spread remaining whipped topping over pudding layer.
6. Break apart remaining Oreos and sprinkle over top. Refrigerate for at least 1 hr.
*Lighten this recipe by using regular Oreos, Neuchaftal cheese, skim milk, light whipped topping, and sugar-free pudding mix! Don't worry, you won't be missing out on a delicious tasting dessert.
