Taste the Rainbow

Healthy Hump Day Recipe

Who considers themselves a busy person? I bet the majority would have their hands raised high. Between work, family, friends, hobbies, and other responsibilities, there just doesn't seem to be enough time in our days. I enjoy being busy because I actually feel like I am more productive knowing there are so many things that need to get done, but it is frightening to think that people sacrifice their health amidst their busy lives. Grabbing fast-food on lunch breaks seems so enticing because of the price, ease, and taste, but it is the last thing your body needs. I am all about inexpensive, simple, and delicious too but in a very healthy way, and you can be too. This fun recipe tastes as good as it is colorful and leaves you full and refreshed for hours. It is protein packed, fruit filled, and vegetable voluminous. Another great thing about this recipe is its versatility. Completely change what you put in it or pair with it for totally different delicious experience. This recipe makes 2 servings in under 5 minutes. You can't get that kind of fast anywhere else but your kitchen!

Rainbow Chicken Salad

Ingredients
-1 16oz can chicken in water
-1/2 large tomato
-1/2 large orange pepper
-large handful of fresh green beans
-4 bread and butter pickle chips
-large handful of red grapes
-small handful of mushrooms
-4 tbsp mustard

Directions
1. Drain chicken and divide into 2 plastic containers.
2. Chop up all vegetables into very small pieces.
3. Layer vegetables and mustard in a fun rainbow-colored order.
4. Store for up to 3 days like this. Stir just before you eat.

*Toast 2 pieces of whole wheat bread and top with a slice of cheddar cheese for a delicious chicken salad sandwich!
*Grab some healthy crackers and use it as a dip!
*Substitute any ingredient for something else fun and fresh that you have in your fridge!


The ingredients

Chop fruits and veggies into tiny pieces
Layer in rainbow color order and store

Stir when ready to enjoy
