Just like all of the seasons, summer has a certain taste. Charred burgers and shish-kabobs on the grill, sweet and juicy melons, and fresh sides served cold to keep down the heat. Coleslaw is one of my summer favorites that I always have looked forward to at cookouts. I love the texture of the shredded vegetables and how the dressing combines freshness with sweetness. However, this dish tends to not be the healthiest option as it is usually loaded with sugar and mayonnaise in order to get that sweet taste. Fear not, coleslaw lovers, for there is a healthier and, dare I say, tastier option to remove the guilt of indulging in this summer side! Although I believe a creamy ingredient is necessary to provide the consistency people know and love, we can cut down on the amount so as to still achieve that creaminess while relying on other ingredients to provide that slightly sweet flavor. This recipe introduces the sweet and crunchy bread and butter pickle as a sweet replacement and adds a nice texture that compliments the crunchiness of the other fresh vegetables. Also, by using a "light" version of mayonnaise, you're instantly saving your side from being taken over by more calories and fat. I tried this recipe for the first time at a our puppy's 1st birthday party, and it was a huge hit! Bring this to your next summer cookout.
Slimmer Slaw
Ingredients
-1/4 cup bread and butter pickles, diced
-1 small head green cabbage, chopped
-2 carrots, shredded
-1 small red onion, diced
-1 tbsp sugar
-1/2 tsp salt
-1/2 tsp pepper
-1/4 cup light mayonnaise
Directions
1. Layer ingredients in a large bowl in the order listed and mix thoroughly.
2. Chill for at least 2 hours prior to serving.
*Use to top hotdogs and burgers or as a side!
*You can purchase pre-chopped and shredded coleslaw vegetables, but it takes no time at all to chop and shred them yourself and gives the dish a much fresher and more homemade look!
*For a non-traditional look, use a red cabbage and sweet onion!
