Veggie Versatility

Tuesday's Tip

The beginnings of each week always start out strong in regards to healthy plans, right? Similar to how people have healthy New Year's resolutions at the start of the year, people have healthy intentions at the start of the week. Sunday is a common day off for people, so the hustle and bustle of the week hasn't caught up with them yet, and their mind is clear of distractions. No wonder it is easy to see yourself eating fresh fruits, vegetables, whole grains, and lean proteins all week! Take advantage of that positive energy right then by preparing food for your week rather than saving it for each day and risking not having the dedication, time, or energy later in the week. You want to have healthy options on hand for when you have those moments where potato chips look so good, you only have an hour to prepare/eat/cleanup a meal, or lack of sleep is taking a toll on you. Grill up a large batch of your favorite vegetables (for me, that's a zucchini, squash, mushrooms, onions, and broccoli medley), and use a portion of it every day during the week. Throw some in brown rice and add soy sauce for a quick Asian-inspired meal, pair some with grilled chicken, sprinkle your favorite seasoning on some for an afternoon snack, or mix them with a whole wheat pasta and a touch of olive oil with parmesan cheese sprinkled on top. Each of those options give vegetables a completely different taste, and that versatility will keep things new and exciting throughout the week. These healthy vegetables will keep you strong and satisfied throughout the week, and those afternoon cravings or time crunch instances will have nothing on you!
