With Fall being less than a month away, I want to spend the next few weeks enjoying the tastes of the summer. Salsa will always be one of my favorite summer sides because of its versatility and how you can literally make a different kind of salsa every time you want it. Sure, some ingredients will remain the same, but the change of even just one ingredient can completely change the taste and give you yet another salsa recipe. Whether it is used as a dip or used as an ingredient in a meal, salsa is always something I like to have on hand, and the ease of making it makes it available in my house at all times. A great thing about making salsa from scratch is that there are no preservatives or extra unnecessary ingredients; rather, it's all super fresh making the flavors that much tastier. The star of this post's salsa is cilantro. It has a very distinct taste and can be recognized in a recipe in no time, and its aroma during the cooking process makes it great to work with. Everything about it just screams "fresh". I used this recipe later on to make a delicious Thai Chicken in the crock pot (recipe to come next week), but we cleaned up the rest of the salsa with some friends and tortilla chips. Yum!
Seasonal Cilantro Salsa
Ingredients
-1 28oz can crushed tomatoes
-2 13oz cans Rotel
-1 medium vidalia onion
-1 jalapeno
-1 clove garlic
-1/2 tsp sugar
-1/4 tsp salt
-1/4 tsp cumin
-3 tbsp lime juice
-1/2 cup cilantro
Directions
1. De-seed the jalapeno and chop along with the onion and cilantro. Don't worry about chopping precisely because they're all about to go into a food processor.
2. Put all ingredients in a food processor. (That's right, all of them.) You may have to do this in 2 batches depending on the size of your food processor.
3. Depending on how chunky you like your salsa, pick a setting that will give you the consistency you want. I didn't this super chunky as I was using it in another recipe, so I put mine on "chop" for about 30 seconds.
*Use in recipes with chicken or seafood!
*Pair with chips for dip!
*Toss on top of a salad as a low fat/low calorie dressing!
*Throw in a couple of tablespoons for omelets!
