Clean Pantry and Dinner in One

Healthy Hump Day Recipe

I realized that I had been hoarding lots of canned goods in our pantry. Now, it is hurricane season here in Florida, and having an ample amount of canned goods is definitely recommended, but I felt like mine had gotten a  big carried away. Vegetables of all kinds and lots of different types of beans made me crave a pot of chili, and I had some ground turkey breast in the freezer. Perfect! I'll make a healthy turkey chili! In fact, to make it quick and easy, I'll make it in the crock pot! We'll have chili for days and a bit more room in the pantry. The thing I love about chili is that you really can't go wrong. Do you like black beans or garbanzo beans? Doesn't matter! Put one or both in. Do you like corn or peas? Doesn't matter! Put one or both in. Do you prefer ground turkey or ground beef? Doesn't matter! Put one or both in. Really, it's up to you what your chili consists of and is a great way to clean out your pantry. The key with flavor, though, is in your spices. Most chili seasonings will consist of some heat, but again, you can tweak that to your tolerance of spiciness. The healthiness factor comes in to play with the type of meat you choose. Ground turkey breast is the leanest type of ground meat available, but if you prefer beef, look for at least a 90/10 meat to fat ratio. Like all crock pot meals, throw in your ingredients and go! You'll come home to a beautiful, flavorful chili that is sure to leave you with some leftovers for future enjoyment.

Pantry Cleaning Turkey Chili

Ingredients
-2 lbs ground turkey breast
-1 28oz can crushed tomatoes
-1 can whole kernel corn
-1 can sweet peas
-1 can garbanzo beans
-1 can black beans
-2 tbsp chili powder
-1 tsp red pepper flakes
-1/2 tbsp onion powder
-1/2 tbsp garlic powder
-1/2 tbsp cumin
-1/4 tsp pepper
-1/4 tsp allspice
-1/4 tsp salt

Directions
1. Drizzle olive oil in the bottom of the crock pot.
2. Over medium heat, brown the turkey on a stovetop.
3. Place all other ingredients in crock pot and top with turkey.
4. Stir all ingredients.
5. Cook on high for 4hrs or low for 8hrs.

*Throw in a handful of chopped spinach when serving!
*Freeze leftovers in individual containers!


The ingredients

Oil the crock pot

Brown the turkey on the stovetop over medium heat

Add all other ingredients to the crock pot

Top with turkey

Stir

Cook on high 4hrs or low 8hrs
