It's Wednesday, the middle of the week, and you are feeling in need of a pick-me-up to make it a strong second half of the week, right? This week's healthy recipe can help re-energize you by giving your body the boost it needs from vitamins and nutrients. We were big fans of tuna salad growing up, and we usually ate it the traditional way with mayonnaise. The tuna portion was healthy, but the mayo may as well have cancelled out the health appeal. Not wanting to sacrifice taste, I tried mixing canned tuna with other flavorful things that gave this classic childhood favorite a healthier spin. This vibrant colored fish dish is full of natural flavors and leaves your eyes, mouth, and tummy satisfied.
Fiesta Tuna Salad
Ingredients
-1 5oz can light tuna in water
-1/2 yellow bell pepper, diced
-1/4 sweet onion, diced
-1/2 small tomato, diced
-1 cup fresh spinach, chopped
-1 tbsp dried basil
-1/2 tbsp dried cilantro
-1 tsp salt
-1 tsp pepper
Directions
1. Drain the water from the can of tuna, and scoop tuna into a small bowl.
2. Mix remaining ingredients into the tuna bowl and stir.
3. Chill in the refrigerator for at least 30 minutes before serving.
