Healthy Hump Day Recipe
Breakfast food is something I could have at every meal, not just the first of the day. In fact, sometimes I enjoy breakfast food for dinner more because my appetite is bigger later in the day. Omelets are always a go-to healthy meal in our house because of how much delicious flavor and variety they can have. Give me your fillings order!
Anytime Omelet
Ingredients
Non-stick cooking spray
3 eggs
Splash of milk
Dash of salt and pepper
1/4 cup chopped red pepper
1/4 cup chopped sweet onion
1/8 cup chopped black olives
1/2 cup chopped fresh spinach
1/4 cup low-fat shredded Mozzarella cheese
Whole wheat toast
Orange juice
Directions
1. Spray medium sized skillet with non-stick cooking spray and heat on Medium.
2. Whip eggs, milk, salt, and pepper together until blended. Set aside,
3. Saute pepper, onion, and olives to your liking.
4. Cook egg mixture until it bubbles, using a spatula to lift a small part of the egg and tilt the skillet so that remaining liquid egg can run onto the pan and cook as well.
5. Place cooked veggies on one half of the egg mixture. Sprinkle with spinach and a bit of the cheese. Fold over the other half of the egg mixture to make a half circle and seal in all of the veggies.
6. Cook until no liquid egg remains, then flip and cook for a few more seconds.
7. Sprinkle with remaining Mozzarella cheese and serve hot with toast and orange juice for a balanced meal.
