Healthy Hump Day Recipe

Can you tell from this post's title that Disney's The Little Mermaid is my favorite Disney movie of all time? The weather here has been perfect for grilling, and with THE Grill Master himself as your husband, you have to take full advantage. Seth is in all his glory at the grill and has whipped up some pretty amazing recipes. One of my personal favorites is his famous salmon. Not only is salmon rich in protein, it also is high in fat (don't worry, it is the good kind of fat- Omega3, not the kind that builds up along your waistline). Although there are few ingredients in this recipe, it sure does have a mighty taste!


Seth's Succulent Salmon for 2


Ingredients

1 lb salmon fillets (you can ask them to remove the scales for you!)
1 tsp salt
2 tsp dill (or until each side is lightly covered)
Juice of 1/2 lemon

Directions

1. Pre-heat grill to medium-low heat.
2. In 2 sheets of tin foil, place 1 piece of salmon in the middle of each.
3. Add salt, dill, and lemon juice to top of salmon prior to enveloping each fillet closed.
4. Poke a couple of holes on the top of each foil packet for venting purposes.
5. Grill for 15min or until fish is a light pink.
