Healthy Hump Day Recipe
My Lebanese grandparents were visiting Florida for the last 2 weeks. It is always so great spending time with them. They have so many stories, so much life experience, and tons of love to give. We tend to eat a lot of Lebanese food when the are here, and it always makes me wonder why we don't eat more of that when they aren't here. It is so good! Lebanese cuisine is also very healthy, so it's a win-win. My "Handy Hummus" recipe has already been featured here, but there is another delicious dip that is full of flavor, goes with many things, and has lots of texture. It is called Baba Ghannouj (say bubba ganoosh) and, although it isn't as recognizable as hummus, is so tasty! It's a great way to feel immersed in a culture that is so well known for yummy and healthy food.
Baba Ghannouj
Ingredients
-1 large eggplant
-1/2 cup tahini sauce
-2 tbsp olive oil
-1 clove minced garlic
-juice of 3 lemons
-dash of salt
Directions
1. Bring pot of water big enough for the eggplant to a bowl. Cook eggplant for 15min.
2. Allow eggplant to cool for 5min, and then split in half. Scoop the inside, juice and vegetable, into a bowl.
3.Mix all other ingredients in another bowl until well blended, and then stir in the mashed eggplant and jucie.
*Dip pita bread, pita chips, carrots, broccoli, cauliflower, pretzels, or any other favorite dipping item of yours!
