Cinco De Mayo

I still love this meal just as much as the first time I had it. So healthy, so easy, and so yummy! Also perfect for your Cinco De Mayo preparation. Arriba!

Healthy Hump Day Recipe


4 ingredients, 4 minutes to prep, 4 hours to cook, and 4 (or more) tasty dinners. I've been making the easiest, most delicious, healthy recipe lately. It is a Mexican inspired chicken dish loaded with protein and veggies. The best part about it is that I make it in the crock pot, so I leave the house with an uncooked meal and come home to a house smelling like something yummy has been cooking all day, and it has! Don't adjust your computer screens at all, the recipe really is as easy as it looks. This dinner is just what your family needs in the middle of the week to help get through the next half!


Fiesta Chicken


Ingredients

-4 skinless boneless chicken breasts, thawed
-1 15oz jar of salsa
-1 15oz can black beans
-1 15oz can corn

Directions

1. Place chicken breasts in the crock pot.
2. Pour entire jar of salsa over chicken.
3. Pour entire can of black beans over salsa.
4. Pour entire can of corn over black beans.
5. Set crock pot on low for 8hrs or high for 4hrs.

Lay the chicken in the crock pot


Pour salsa over chicken


Pour beans over salsa


Pour corn over beans


Turn crock pot on low for 8hrs or high for 4hrs
