Happy Easter!

Sweet Recipe Saturday

We are back home this weekend to celebrate Easter with our families, and my mom and I were in the kitchen getting things ready for our meal at the beach tomorrow! I can't wait to soak up some sun while spending time with everyone and eating delicious food. I, of course, was in charge of the desserts. In honor of the holiday, this week's edition of Sweet Recipe Saturday featAures not one but TWO Easter desserts. The Easter Bunny is quite the guy.

Peeps' Nests

Ingredients
-4 1/2 cups pretzel sticks
-12oz white chocolate
-12oz bag of egg-shaped peanut M&Ms
-16 Peeps

Directions
1. Place pretzel sticks in a large bowl and crush using your hands into about 1/2 or 1/3 of their original size.
2. Melt white chocolate in a medium microwavable bowl in increments of 30 seconds until completely smooth. Poor over pretzel sticks and stir to combine.
3. Place parchment paper on a cookie sheet. Using 2 forks, grab and form into flat circular "nest-like" formations.
4. Place 2-3 M&Ms onto each "nest". 
5. Chill in refrigerator until completely set.
6. Arrange nests with Peeps to resemble a bird sitting on its nest.

Ingredients


Pre-crushed pretzel sticks


Crush into 1/2 or 1/3 of original size


Crushed pretzel sticks


White chocolate in a microwavable bowl


Pour melted chocolate over pretzel sticks


Mix until fully incorporated


Form into nest-shapes on parchment paper


Add 2-3 egg-shaped candies on top


Refrigerate for at least 1hr


Arrange peeps and nests

Bunny Bars

Ingredients
-1/3 cup softened butter
-1/3 cup packed brown sugar
-1/2 cup pecans
-1 cup flour
-8oz softened Neufchatel cheese
-1/4 cup sugar
-1tsp vanilla extract
-1 egg
-1 cup M&Ms, divided

Directions
1. Preheat oven t0 350 deggrees.
2. Beat butter and brown sugar until smooth. Add pecans and flour, and mix until fully incorporated.
3. Save 1/2 cup of the crumb mixture, and press the remaining into a greased 8" baking dish. Bake for 10min.
4. Meanwhile, combine cheese, sugar, and vanilla in an electric mixer at medium speed until fully incorporated. Add egg and continue to mix.
5. Pour 1/2 cup M&Ms evenly over the baked crust. (They may crack a little because of how hot the crust is.)
6. Pour cream mixture evenly over the M&Ms. .
7. Combine remaining crumb mixture and M&Ms well and spread evenly over the cream mixture. Bake for 20min.
8. Cool completely before cutting into bars.

Next 4 ingredients for cream mixture


Baked crust ready to be topped


Layer of M&Ms


Pour cream mixture over M&Ms


Combining leftover crumb mix and M&Ms


Ready to be topped some more


Sprinkle with remaining crumb/M&M mix


Bake for 20min


Cool completely before cutting into bars
