My parents recently visited us, and my gem of a mother stopped at our favorite Lebanese restaurant back home, Oasis Cafe, and picked us up some of our favorites- tabbouleh, hummus, and pita bread. My aunt, uncle, and cousin visited us a few weeks ago, and we found this delicious Lebanese quick-service restaurant that made some amazing wraps, and I watched how they intricately folded the pita to make the perfect wrap. I decided to make myself a Lebanese inspired wrap using my yummy gifted ingredients plus the techniques of a newly discovered favorite take-out restaurant. It was so good that I have had it for lunch for the past 4 days (and plan on continuing that until the ingredients are *sniff* gone *sniff sniff*).
Pita Pocket
Ingredients
-1 pita loaf
- 4 slices thinly cut turkey breast
-1tbsp hummus
-2tbsp tabbouleh
-1/2 cup fresh spinach
Directions
1. Carefully open the pita by tearing a small slit at the top and sliding your hand into the pita so that it evenly comes apart. Tear along the edge stopping when half of the top of the pita is separated.
2. Stuff turkey into the bottom of the pita.
3. Spread hummus on the top half of the bottom pita.
4. Spread tabbouleh evenly on turkey.
5. Stuff spinach into the pocket.
6. Fold over the top pita tucking in all ingredients and roll up.
*If pita is cold, zap in microwave for 10 seconds so it is easier to separate.
I never knew there was a way to properly split the pita! That is probably why mine look like......... :)

ReplyDeleteYUMMMM! This looks amazing! Have you tried Pita Pit yet? They do their pitas very differently, putting cooked meat, veggies, etc. SO GOOD!
