Everyone craves the weekend. Even if you end up waking up around the same time as you normally would, just the fact that an alarm isn't what is waking you up feels good, doesn't it? Unless there is something going on, our weekends typically move slower as we are enjoying the relaxation after a week of work. We usually enjoy a big brunch loaded with delicious breakfast food that is packed with vitamins and nutrients. This past weekend, we enjoyed brunch at home in Sarasota while visiting for Easter. My Mom, Seth, and I were craving eggs, so I knew just what to make us- a yummy egg scramble, turkey sausage, whole wheat toast, and a glass of fresh orange juice. There was no gamble with this scramble! It was the perfect and filling way to start our day
Breakfast Scramble
Yield: 1 serving
Ingredients
-1tbsp water
-2 sausage patties
-2 eggs
-1tbsp skim milk
-1/4tsp salt
-1/4tsp pepper
-1/2 cup chopped spinach
-1 slice whole wheat bread
-1tbsp Smart Balance
-1 cups orange juice
Directions
1. Pour water into pan. Turn stove to medium heat and add sausage.
2. Crack eggs into a small bowl and add milk, salt, and pepper. Whisk only until incorporated.
3. Pour eggs into pan on medium-low heat. Meanwhile, chop spinach.
4. Add spinach to eggs and start moving around the scramble with a spatula to keep them light and fluffy.
5. Flip sausage patties.
6. Add bread to toaster.
7. Continue moving around the scramble until fully cooked, but not a second more.
8. Once sausage is fully cooked, pat excess grease off with a paper towel.
9. Butter the toast, pour the orange juice, and sit down to the perfectly balanced brunch!
*Water in the sausage pan allows the sausage to cook completely
*Milk in the eggs allows for a lighter and fluffier egg and also sneaks in some calcium
*Don't over-whisk eggs or a deflated scramble will result
*Cooking the eggs slowly over medium-low heat allows them to stay fluffy throughout cooking
*The sausage will still taste amazing without all of the grease, so patting it dry saves you from the fat and extra calories
*Smart Balance is a great replacement for butter because it has very few trans fats
The ingredients |
Add water to sausage pan |
Cook sausage on medium heat, flipping once |
Add eggs, milk, salt and pepper to mixing bowl |
Scramble until incorporated |
Cook eggs on medium-low heat |
Chop spinach |
Add spinach once eggs have very slightly settled |
Continue to move scramble around |
When sausage is done, pat dry with paper towels |
You won't miss that grease |
