My parents came up to visit a couple of weekends ago (Remember that crazy Oreo dish I made for them? If you missed it, check it out here!), and Seth wanted to use his new smoker to make food for dinner. He has already been dubbed the Grill Master, but he wanted to add Smoke Master to his areas of expertise. He had made smoked wings a couple of weeks prior, but he decided to go straight to the mack-daddy of smoking meats and make ribs. We were all so excited while he was preparing them. They looked so good, and the spices smelled amazing. I decided to make some vegetables to go with it, but I didn't want to grill them since I wanted the smoked flavor to be the star of the show. I ended up baking them in the oven, and WOW were they good. The got so juicy and tender, and I used the spices that Seth used for the ribs for a nice complement. There really is not a whole lot to the recipe which makes throwing this together even better. It was the perfect side to Seth's amazing barbecue ribs!
Baked Veggies
Ingredients
-6 russet potatoes
-2 zucchini
-2 squash
-2 cups portobello mushrooms
-1 medium vadalia onion
-4 tbsp extra virgin olive oil
-4 tbsp seasoning
Directions
1. Wash vegetables. Chop into small bite-sized chunks.
2. Lay potatoes on one cooking tray and other vegetables on another cooking tray.
3. Drizzle with olive oil and sprinkle seasoning.
4. Bake at 450 degrees for 40 minutes.
*If you don't have the above veggies, replace them with some of your favorites!
*Use whatever seasoning you want that will complement the meal you are having!
