Fresh Flavorful Fish Fillets

Salmon was on sale at the grocery store the other day, so you better believe that we it for dinner that evening. What I loved about this salmon most was that the display sign said "fresh, never frozen", so we knew it was going to be delicious and leave us feeling like we were on the beach somewhere. Salmon, in my opinion, does have a rather fishy taste, so I like to disguise some of that taste with strong flavors. To go along with the fresh theme, I wanted something with crunch and color. My mind instantly turned to salsa, and when I remembered that we had a mango in the refrigerator, dinner that evening was officially in the works. To make my mango salsa, I paired the sweet fruit with other bright colored vegetables to make it look beautiful, and I used spices like basil and parsley instead of the usual cilantro because I really wanted the mango to stand out. This salsa looked and tasted delicious on its own and may be a go-to item for chips and salsa at our next party, but it was also the perfect pairing to our fresh salmon. The color and crunch that I was craving was perfectly satisfied with this meal.

Mango Salsa Salmon

Ingredients
-1 fresh mango
-2 roma tomatoes
-1/2 sweet onion
-1 green bell pepper
-1 tbsp basil
-1 tbsp parsley
-1/8 cup lemon juice
-1 lb salmon fillets
-1 tbsp extra virgin olive oil
-1/2 tbsp salt
-1/2 tbsp pepper

Directions
1. Dice up fruit and vegetables into small, similar sized pieces.
2. Mix all ingredients together and allow to chill for at least 2 hours.
3. Drizzle olive oil and sprinkle salt and pepper on salmon fillets.
4. Using a George Foreman, spray the grill with cooking spray and grill salmon on medium-high heat until flaky (around 8min).
5. Remove salmon from grill and immediately scoop salsa onto it. Allow to rest for 3 minutes prior to serving.
